306 - Food premises not maintained in a sanitary condition [s. 17(1)] Observation: All exterior surfaces in the kitchen require cleaning ie floors/ walls. This includes the exterior of the dishwasher, wall surfaces in the dishwashing area, floor in the dishwashing area, floor mat in dishwashing area, door to walk in cooler, exterior surface of the sandwich prep cooler, exterior surface of the hot holding unit. Corrective Action(s): All cleaning to be done by Monday november 25 when a follow up inspection will be conducted to verify. Violation Score: 15 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)] Observation: Sandwich prep cooler not is use due to mechanical issues. Dishwasher not dispensing chlorine into final rinse Exhaust canopy was initially turned off but was turned on when I commented on the smoke build up in the kitchen Red cutting board stained and damaged Corrective Action(s): Repair sandwich cooler by Monday Nov 25 Repair dishwasher by Friday Nov 22. Exhaust canopy must be on when cooking food. Replace red cutting board. Violation Score: 15
