Observation (CORRECTED DURING INSPECTION): Food items stored in sandwich prep cooler measured above 4C. All probed insert items (various deli meats) were 13C, probed mixed tuna stored in undercounter compartment was 11.3C.

Observation: Cleaning is required in noted areas:
> Walk-in cooler --> underneath shelving units, some food debris.
> Walk-in freezer --> cluttered; reorganize boxes and/or add extra shelving so that items are not stored on the floor.
Corrective Action(s): Clean and sanitize, and reorganize above noted areas.

Observation: Sandwich prep cooler had air temperature of 9.7C at start of inspection. Temperature came down to 8.3C after inserts were covered momentarily.
Corrective Action(s): Adjust prep cooler so that air temperature is maintained at 4C or colder. Do not store foods overnight in prep cooler until it has been serviced. All insert items must be for immediate use only, and time tracked.
