Observation: Dishwasher final sanitizing rinse reached max. at 69.8 deg C at plate surface.
Corrective Action(s): Contact service tech to fix the problem. For mean time, dishes can still be washed in the dishwasher but dishes to be sanitized in the 2 comp sink with chlorine concentration of 50 ppm for at least 30 seconds (24 deg C). Follow up on March 8, 2018.

Comments

Hand sink at the pizza cooking area was provided with liquid soap and paper towels.
Bleach sanitizer measured 100 ppm.
Walk-in cooler was at 1 deg C. All other coolers were at 1-4 deg C.
Freezers were colder than -18 deg C.
No signs of pest noted except for a few ants in the back. This was noted in the last inspection coded 304.
311 Worn out flooring is still outstanding.
Code 309 has been corrected - spray bottles are now labelled.
Glass ware washer had 12.5 ppm Iodine residual.
