Observation (CORRECTED DURING INSPECTION): At time of visit (2:15pm) it is the end of lunch service and staff are starting to clean up. Observed one container of food transferred from hot holding unit to top display case to cool, with seran wrap covering the container.
Corrective Action(s): Cool foods properly.
1. Cool foods at room temperature - no cover, shallow containers - from 60oC to 20oC in 2 hours.
2. Transfer to cooler for further cooling, from 20oC to 4oC in 4 hours.

205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): 1. 5 rolls of kimbap observed storing at room temperature. Food internal temperautre is measured at 20.1oC.
2. 2-door sliding cooler is measured to be 7.9oC (air temperature). Food internal temperature (raw egg) is measured at 7.1oC. Temperature log at 10am indicated temerpature of 4oC.
Corrective Action(s): 1. Kimbap is a potentially hazardous food with rice, sliced cucumber, tuna, etc. and therefore must be kept in cooler at 4oC or less. Kimbap discarded.
2. Do not store any potentially hazardous foods in this cooler until temperature can be maintained at 4oC or less. Potentially hazardous foods discarded.

Observation: Some products still observed storing on ground - food buckets in storage room, and pop by staff washroom.
Corrective Action(s): All prodcuts must be stored at least 6 inches above ground.

Observation: 2-door sliding cooler is too warm, at 7.9oC.
