A routine inspection was completed, the following observations were made:
- Coolers 4C or colder; freezers -18C or colder; hot holding unit above 60C; thermometers present; and temperatures recorded daily.
- High temperature dishwasher rinse cycle had a temperature of 74.4C at the plate's surface, as per max/min thermometer.
- Quats sanitizer in cloth buckets was 200ppm. Timer used to remind staff when to change the sanitizer.
- All foods stored in food grade containers; covered; labeled; date coded; foods stored in groups with proteins separate and/or below RTE foods; and foods stored 6" off the floor on racks, shelves or platforms.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good, other than the mentioned areas. Exhaust canopy service sticker, for commercial cleaning, indicates cleaning to be done this month. Staff stated that the company is scheduled to come in and clean the exhaust canopy this week.
- No signs of pests.
- FoodSafe certified staff present.
- All equipment, food containers, and lids are in good working order.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water. |
