Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] (High temperature dishwasher reached 67.3C at the plate)

Follow up inspection as per inspection conducted on June 10.

The following items have been corrected:
- violation 302 - temperature dishwasher reached 74C at the final rinse/test strips used to measure the plate temperature /
- violation 308 - accurate thermometer is available at the glass upright cooler/ measured air temperature at 0C
- boxes from the back storage area - removed

Please ensure to have wiping clothes stored in the bleach solution at all times ( 1 oz of bleach per 1 gal of water - 100ppm ). This will prevent any possible outbreaks in your facility or cross contamination during the food preparation/processing and serving. Instead of bleach, at the customers area you can use quats as alternative approved sanitizer.

Walk in cooler door work order is in place for door repair. Please at least install the new sealing around the door since the new door may not be installed by our next inspection - February, 2017.
Oysters advisory will be presented to the customers at the time of order. Also owner explained that he does not receive the oyster during the red tied season.
