Observation (CORRECTED DURING INSPECTION): Leftover rice was being cooled in deep containers. Internal temperature of ranged from 45-57 degrees C.
Corrective Action(s): Leftover rice must be cooled in shallpw pans (max. 3 inches deep) to allow for faster cooling. Refrigerate the rice within 45 minute to one hour.
