Observation: 1) Small amount of pooling water noted by floor drain near front prep coolers.
2) Biofilm noted on condenser panel of ice machine.
Corrective Action(s): 1) Ensure any water from cleaning/mopping/draining of equipment is cleaned up/dried.
2) Clean and sanitize the ice machine more frequently.

Comments

- Hand washing sinks were properly supplied with hot and cold running water, liquid soap, and paper towels.
- Quat-based food-contact surface sanitizer available at 200 ppm.
- Low-temperature chemical dishwasher was sanitizing at 100 ppm (chlorine residual), detected at the dish surface after final rinse cycle.
- Bar glasswasher sanitizing at 12.5 - 25 ppm iodine after staff refilled sanitizer supply (see violation code 302 above).
- Sinks maintained in sanitary conditions
- Coolers measured 4C or colder. *Note: one cooler measured at about 7C, only being used to store unopened beverages not requiring refrigeration. OK.
- Freezers measured at -18C or colder
- No hot-holding at time of inspection
- Reviewed thawing procedures at time of inspection
- Good food storage practices noted. All food stored off the floor, covered, labelled. Good separation between raw and ready-to-eat food items.
- Ventilation canopy maintained in sanitary condition.
- Sanitation satisfactory at time of inspection, however some areas need addressing (see violation code 306 above).
