Observation: Some big frozen food packages are still placed on the floor of the walk in freezer.
Corrective Action(s): Ensure to store foods at least 15 cm above the ground. Correction required today. Operator informs me they are ordering smaller crates for the very heavy items.

Observation: Old food debris and further cleaning still required in the fans of the walk in coolers.
Corrective Action(s): Clean and sanitize these areas regularly. Correction required in three weeks.

Observation: Walk in freezer is still building up ice after cleaning. Top floor bar fridge remains broken.
Corrective Action(s): Clean and repair walk in freezer. Correction required in two weeks. Repair bar fridge when possible. Only use this fridge for non-perishables.

Comments

Many previous corrections completed:

Dishwasher final rinse now is at 71.9C at the plate and 76C is observed at the manifold
Old broken equipment has been discarded. Melted microwave removed.
Stand up freezer has been repaired and ice has been removed.
Cleaning has been conducted, more cleaning required still.
Rodent droppings have been cleaned.
Pest control monitoring and baiting in place monthly. Operator will work with pest control company for improvements.
HVAC cleaning has been schedule tomorrow by licensed technician.

Outstanding corrections will be completed by next inspection.
