402 - Employee does not wash hands properly or at adequate frequency [s. 21(3)]
Observation (CORRECTED DURING INSPECTION): A staff member who was wearing gloves was observed to be rinsing her hands. Gloves should be changed in between uses and proper hand washing must take place with hot and cold water, soap and paper towels.

Comments

-Note: Stand up refrigerator and prep cooler both had ambient and internal temperatures of 8 C. The inspection was conducted at a busy time. Monitor both and ensure that they are maintaining a temperature of 1-4 C at all times.
Hand sinks supplied with hot and cold water, soap and paper towels.
All coolers were < 4 C.
All freezers were < -18 C.
Bleach solution was at 100 ppm.
Dishwasher final rinse cycle reached 71 C at the plate level. Ensure that it is checked daily.
No evidence of pests. Traps in place. Ensure that they are monitored.
General sanitation was satisfactory.
