Observation (CORRECTED DURING INSPECTION): 1. Found a can of tomato sauce that was dented.
2. Found ice scoop in walk-in cooler to be on wood shelf
3. Ice bin out front was with out lid
Corrective Action(s): 1. Do not use cans that are dented as metal from the can may leach into the food and cause metal poisoning.
2. Ensure ice scoop is store in a washable container
3. Keep lid on ice bin when not using (i.e. when not buy)

Comments

-Small prep cooler was 2 C on bottom and 3 C on top
- Large prep cooler was 2 C on bottom and 8 C on top. (just after lunch-keep lids on when not busy and fill inserts with small amounts and fill more frequently.)
- walk- in cooler was 3 C
- Deep freeze was - 14 C
- Up right freezers in back were all - 18C or colder
- Hot holding was 60 C
- Wiping rags were in 200 ppm chlorine
- hand sinks had liquid soap, paper towel, hot and cold water
- Dishwasher had a final rinse of 82 C at gauge and 72 C at plate.
- No signs of pest activity noted during inspection, pest control is on contract.
- Floors have been replaced
- Light covers have been replaced
