302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 2 spray bottles in the kitchen were labelled as bleach sanitizer but contained 0ppm chlorine.
Corrective Action(s): Staff remade the solutions at the time to measure 200ppm chlorine. Test strips are available - use the test strips each time a solution is made.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Front handwash sink at the server station is missing paper towels. Facility does not have an extra supply of correct paper towels for this dispenser or a separate roll to place on the counter.
Corrective Action(s): All handwash stations must be fully supplied with liquid soap, paper towels and a waste bin nearby.

Staff supplied a small basket of napkins to use for hand drying. The correct kind of paper towels must be obtained for the dispenser.

209 - Food not protected from contamination [s. 12(a)]
Observation: 1) Observed several containers of stored food inside coolers that were left uncovered.
2) Several used cans were being repurposed to use as storage containers for utensils.
3) Opened leftover canned foods were being kept in the original can.
4) Rice scoops were stored in room temperature water.
Corrective Action(s): IN GENERAL
> All foods must be covered and protected from contamiation.
> Any leftovers from opened cans must be transferred into a food grade container. Cans that have been opened are NOT food grade anymore and should not be used or repurposed for other food items or food utensils.

210 - Food not thawed in an acceptable manner [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): At start of inspection, facility was thawing a container of frozen meat in a bucket that was stored on the ground. Surface temperature of the frozen meat was 0C, staff claimed it was taken out about 1 hour prior to observation.
Corrective Action(s): All frozen foods must be thawed IN THE COOLER under refrigeration until it is ready to use, OR under cold running water in the prep sink. Do not thaw frozen food at room temperature.

Staff moved the bucket into the walk-in cooler immediately.

Observation: Droppings were observed throughout the kitchen:
> In the packaging area outside of the staff washroom
> In the staff washroom
> Under the dishwasher and along the wall under the warewashing sink
> In the corner behind the door between the kitchen and dining room where brooms are stored
> Between the domestic fridge and wall in the dining room
> A few in the dry storage room under the wooden shelving
Corrective Action(s): Remove droppings, sanitize the areas with a strong bleach solution to remove scents.

Observation: Cleaning is required in the following areas:
> Food debris and grease accumulation at the cook line - underneath and behind the cooking equipment.
> Grease accumulation on the exterior surfaces of the vent hood.
Corrective Action(s): Clean and sanitize the premises as per your sanitation plan. Maintaining a sanitary envionrment will help to reduce the presence of pests.
