Premise is sanitary. No signs of pests at the time of inspection. Hot and cold water available. Liquid soap and paper towels available at hand sinks. Staff demonstrate good personal hygiene and safe food handling. Food protected from contamination with food grade lids and covers. Single use items and utensils are sanitary. (Ensure to time stamp food in service line according to food safety plan) Ice machines are sanitary with dedicated scoops. Quat sanitizer in use 200 ppm. Sani cloths are washed on laundered on site. 3 compartment sink in use with sanitizer. Dishwasher final rinse at 50 to 100 ppm chlorine at the plate. Temperature and chemical monitoring in place. Holding units: Prep line and service coolers at or below 4 deg C. Counter beef patty freezer at -16.7C. Fries holder at -19C. Hot holding pick up unit at 60C and above. Walk-in cooler at or below 1 deg C. Walk-in freezer at -24 deg C. Basement: Walk-in cooler below 4 deg C. Walk-in freezer below -18 deg C. Dry storage area kept organized.
