- General sanitation was satisfactory.
- Handwash sink was fully equipped with hand soap, paper towel and cold/hot running water. Staff have good hygiene practice.
- Walk in cooler and under-the-counter cooler temperature measured below 4C. Food containers properly covered.
- Walk in freezer -20.5C.
- Hot holding for beef gravy and all kinds of the sauce > 60C.
- High temperature dishwasher at 78.2C at the final rinse cycle.
- Temperature log available for review.
- Ecolab DDBSA test strip available for measuring sanitizer concentration, dark green was the perfect range according to the technician.
- Staff stated they use Ecolab sanitizer-soaked cloth to wipe the food contact surfaces- excellent!
- Utensils properly stored.
- 2-compartment sink was available for dish washing.
- Dry Goods stored 6 inches off floor and protected from potential contamination. Dry storage area well organized.
- randomly selected foods were within their Best Before Date.
- Chemical stored away from food.
- No pest activity observed during the inspection. Back door was tightly closed.
- Staff Washroom was in a sanitary condition.
- About 10 staff have their FOODSAFE Level 1 equivalent valid certificate.
