Routine Inspection:

Kitchen:
- Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
- All temperatures met health requirements:
Coolers maintained at or below 4 degrees Celsius.
Freezers maintained below -18 degrees Celsius.
Hot holding maintained above 60 degrees Celsius.
- General food storage practices good.
All food items in coolers, freezers and dry storage areas are covered and protected from contamination.
All food items stored at least 6 inches off the floor.
Raw meats stored on bottom shelves and away from cooked and ready-to-eat foods.
- High temperature dishwasher sanitizing with >71 degrees Celsius on at dish level.
- Chlorine (bleach) sanitizer in bucket = 200 ppm. Wiping rags stored in sanitizer solution - good.

Bar:
- Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
- Keg cooler maintained at 4 degrees Celsius.
- Glass washer sanitizing with 50 ppm chlorine.
- Chlorine (bleach) sanitizer in bucket = 200 ppm. Wiping rags stored in sanitizer solution - good.

Overall:
- Sticky traps and rodent trap boxes present throughout premises. All boxes empty at time of inspection.
- No rodent droppings found at the time of inspection - excellent! Keep this up!
- Ice machine clean.
- Syrup closet clean.
- Premises well lit. Shatter proof covers on all light fixtures for light bulbs.
- General sanitation of facility was satisfactory at the time of inspection. Ensure to keep up with the sanitation for food safety and maintenance.

Reminder:
- Ventilation canopy is due to be cleaned in April. Ensure that outside of canopy and back wall area (near pipes) are also cleaned frequently as they have accumulation of grease and this is a potential fire hazard.
- Ensure to check all pest traps daily.
- Ensure regular cleaning of all storage areas are done to check for rodent droppings and maintain a good level of sanitation.
