Observation (CORRECTED DURING INSPECTION): - Observed several steam buns stored in the display hot holding unit with internal temperatures ranging from 45 deg C to 55 deg C.
- Supervisor indicated the steam buns were stored in hot holding unit 1 hour ago
Corrective Action(s): - Staff had removed the steam buns from the hot holding unit and reheated them to above 74 deg C
- Food product must be hot held above 60 deg C
- After reheating, if internal temperature drops below 60 deg C, discard the buns
