Observation (CORRECTED DURING INSPECTION): Single use wiper was being sanitized in the sink to be re-used to wipe down the oven. The staff was asked to discard the used wipers.
Corrective Action(s): New wiper shall be used to clean food contact surfaces each time.

- Handsink is equipped with hot & cold running water, liquid soap and paper towels
- Temperatures of all refrigeration units meet regulatory requirements (<4C coolers, <-18C freezers)
- Hot holding foods measured >60C
- Temperature log is in place
- Staff demonstrate good hygiene
- Food stored in an organized manner
- No signs of pest activity noted at the time of inspection

NOTE:
- 400pm QUAT detected in the sanitizer bottle & at the sink. Ensure that 200ppm QUAT is maintained. Adjustment at the dispenser is needed.
- Clean and sanitize all knives.
