Observation (CORRECTED DURING INSPECTION): Deli cooler is at approximately 8C. Manager states it was due to cleaning from earlier.
Corrective Action(s):
1) Manager proposed solution: to use ice water to keep temperature down to 4C or below. Fill the trough with ice water so that the inserts are submerged. Temperature must be taken and recorded every 2 hours and foods must be discarded if it is above 4C. The lid to the deli cooler must be closed when not in use. Foods must be moved into the walk-in cooler overnight.
2) Repair or replace cooler. If this is not repaired by the follow-up inspection, a CLOSURE ORDER will be issued.

General:
- handwashing stations stocked with soap, paper towels and hot and cold running water
- hand hygiene is frequent
- sanitizer measured 200ppm in spray bottle and sanitizing sink
- food clearly marked
- please monitor back area for fruit flies, especially around pop syrup shelf

** sauce is labelled for 4-JUL-2020 expiry, invoice from Sysco states that the expiry dates have been extended by 60 days past printed date on package
