- 100ppm chlorine residual detected in sanitizer bottles & buckets
- High temp dishwasher reached 73C at plate's surface
- All coolers and freezers measured <4C & -18C, respectively
- Foods coolers are properly covered & protected from contamination
- Dry storage is adequate (pest proof containers)
- Rice scoops are stored in ice bath
- Temperature log is kept up to date
- Ice machine & vent hoods are maintained
