Observation:
The handwashing sink in the front service area has clean dishes, and the paper towel dispenser is found beside food. Dirty water, from people washing their hands, splash and land on the clean dishes. Water dripping from staff hands, as they reach to get a paper towel will fall onto the food. This may contaminate the dishes and food.
Corrective Action(s):
1) Install splash guards and/or divider panels on each side of the hand washing sink to prevent water from splashing on food and clean dishes. The splash guards and/or divider panel shall be made of a durable, sealed, cleanable and smooth material (stainless steel, plexiglass, etc.).
2) Relocate the paper towels dispenser, so that it is above the handwashing sink.

There is accumulated food and water on the floor, behind the tilt soup kettle. This will attract and harbor pests.

Routine inspection completed:

Country Kitchen
- Coolers 4C of colder; freezers -18C or colder; hot holding units above 60C; thermometers present; and temps recorded daily.
- High temperature dishwasher had rinse cycle temperature of 75.6C at the plate's surface, as per max/min thermometer.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer in spray bottles had 200ppm strength.
- All foods stored in food grade containers; covered; labeled; date coded; food stored in groups with proteins separate or below RTE foods; and food stored 6" off the follow or racks and shelves.
- No expired foods in use or for sale. FIFO rules being followed.
- All surfaces are in good working order.
- General sanitation level is good.
- Exhaust canopy and filters have some accumulation of dust and grease. These shall be cleaned on a regular basis, between professional cleanings.
- No signs of pests. A professional pest company monitors for pests every 3-4 weeks.
- Valid, FoodSafe certified staff present.

Tea Garden
- Cooler 4C, freezer -23C; and thermometers present.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.

- All items are taken to the Country Kitchen for washing.

- No baked products containing proteins are being stored at room temperature (display cases) at time of inspection. Good.

ACTION
- Professional cleaning of the exhaust hood is due this month (Oct. 30/23) as per service sticker. Ensure to contact a company and schedule a cleaning this month
- Develop a schedule when the exhaust filters will be cleaned on a regular basis (between professional cleanings), and add it to the cleaning schedule.
