Observation (CORRECTED DURING INSPECTION): The top row of foods in the prep cooler had an internal temperature of 12 C.
Corrective Action(s): Discarded. Keep foods on ice until the cooler is fixed.

Observation (CORRECTED DURING INSPECTION): The dishwasher had 0 ppm chlorine at the start of the inspection.
Corrective Action(s): The dishwasher was fixed during the inspection and had 100 ppm chlorine after being repaired.

Observation: Holes underneath the 3 door cooler observed during the inspection. This can allow pests to enter the premises.

Observation: Cleaning needed in the following areas:
-Underneath tables, equipment, freezers and coolers throughout the kitchen.
-The kitchen walls require cleaning to remove dust/ grease buildup.
-The staff area upstairs needs cleaning and organization.
Corrective Action(s): 1 week.

Observation: The prep cooler next to the table on the cook line had an ambient temperature of 11 C and an internal food temperature of 12-13 C.
Corrective Action(s): After discussing with the chef, the prep cooler will be replaced and not repaired. Ensure that any inserts that must be out are fully submerged in ice until it is replaced.

Observation: a) Paint is chipping on the ceiling above the dish pit and the side door.
b) The wall starting from the dish pit going to the back storage area is not being maintained in good repair. There is a hole in the wall and it is not smooth, durable and easy to clean.
Corrective Action(s): a) Refinish/ repaint within 2 months.
b) Repair the hole in the wall and repaint within 2 months.

Comments

-Follow up inspection in one week.
All coolers, except for the one mentioned above were < 4 C.
All freezers were < -18 C.
No evidence of pests, pest control comes on site monthly.
