Observation: Observed accumulation (minor to moderate) of food debris inside prep cooler #1 (sauces) and below grill (floor around legs and at back along wall).
Corrective Action(s): Make sure as part of the daily clean-up all parts of the food prep areas (including inside prep cooler) gets a cleaning and spot sanitizing.
Make sure the area below the grill is cleaned more often than current cleaning schedule. If area is cleaned thoroughly every two weeks, increase to weekly. This will help reduce the accumulation of greases and food debris in around this area.

Comments

Currently the sanitation process for premises is at the end of the day. There must be a system for sanitizing work areas (food prep) throughout the day.
**Implement the sani-bucket idea as discussed (1/2 teaspoon bleach to 1 litre of water will give you 100 to 200 ppm solution). This bucket should be changed every 2 hours or so, depending on use. Have in place by next scheduled inspection.
-cooling units less than 4 C.
-hot holding above 60 C. Secondary cook step in place. Good.
-handwashing stations well equipped.
