Observation (CORRECTED DURING INSPECTION): Quats concentration in spray bottle 0ppm. Spray bottle was labeled as quats.
Corrective Action(s): Ensure during operation an approved food contact surface sanitizer solution is available for use. Spray bottle filled with 200ppm quats manually diluted at 3 compartment sink.

Preparation cooler inserts and lower section at or below 4 degrees C.

3 compartment sink setup for manual warewashing. Recommend obtaining test strips to verify quats concentration.
Hand sinks provided with liquid soap and paper towels.
Temperature monitoring records sporadic. Ensure temperature monitoring records are maintained on a daily basis.
