A routine inspection was completed, the following observations were made:
- Coolers 4C or colder; thermometers present; and temperatures recorded daily.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Low temperature dishwasher had [Cl2] of 50ppm during the rinse cycle.
- Quats sanitizer in spray bottles had concentration of 200ppm.
- All foods stored in food grade containers; covered; labeled; date coded; foods stored in groups with proteins separate from RTE foods; and all foods stored 6" off the floor on shelves, racks or platforms.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is great. Exhaust canopy clean and pizza conveyors were clean.
- No signs of pests.
- All surfaces, equipment, utensils, and cookware are in good working order.
- FoodSafe certified, or equivalence course, staff present.
- All in order. |
