Comments

*Do not leave onion and meat slicers overnight without proper cleaning and sanitizing.
Ensure to take the equipment apart, wash all parts with soapy water, rinse and sanitize with 200 ppm chlorine bleach.
Use 1 oz per gallon of water to make 200 ppm chlorine solution.

*Remove all nails, thumb tacks or push pins from food preparation and storage areas.

Walk-in cooler below 4 C.
Deep freezer below -18 C.
Liquid soap and paper towels available at the hand sink.
Bleach sanitizer available for use.
General sanitation is satisfactory.
