Comments

Food Handler Hygiene
o Hand wash stations are fully supplied with liquid soap and paper towels in dispensers
o Hand washing was observed during the inspection
o Gloves were used appropriately
o Operators had clean clothing for food preparation

Storage Temperatures
o Cold holding Coolers are below 4C
o Cold holding Freezers are below -18C
o Hot holding food items are at 60C
-Multiple warmers including for display warmer (turkey pieces and stuffing), soups, stews, chilli's, and one warming unit for turkey slices en jus.
-Turkey pieces in display cooler internal temperature 47C - time is used as control and reheating with oven also used as control. Ensure this is served out within 2hrs.

Food Processing and Food Protection
o Cooking - Temperatures for cooking are being monitored with probe thermometers
o Approved Food Source - food ingredients from an approved sources
o Food Storage - Food is stored in covered containers.
-Raw meats are stored on the lowest shelf
-Coolers are organized to prevent cross contamination
-Raw dog food is kept in separate area, boxed and covered, separate coolers/freezers

Maintenance and Sanitation
o Dishwasher - 50-100ppm Chlorine sanitizer (50ppm measured in final rinse cycle)
o Chemical dispensers - 200ppm Quat sanitizer dispensed from tube in wall
o Sanitizer bottles - have 200ppm Quats
o Storage of chemicals is separate and away from food
o Condition of equipment and surfaces - food contact surfaces and equipment are in good repair and clean condition
o Pest control - Operators have a pest control contractor in place and there are no signs of pests at the time of inspection.
