Observation (CORRECTED DURING INSPECTION): -Tested three buckets of sanitizer (and 1 spray bottle) all of which were at 50 ppm QUATS
-200 ppm QUATS is required to achieve adequate disinfection.
Corrective Action(s): -Staff dispensed fresh QUATS from dispenser which was measured to be at 200ppm
-Ensure sanitizer is changed frequently enought to maintain adequate concentration.

Non-Critical Hazards: There are no non-critical hazards.

Comments

-Hand-washing sinks have hot water, liquid soap and paper towel
-walk-in coolers are <4°C
-Freezers are < -18°C
-Hot holding units for sauces are > 60°C
-Dish washer dispenses 100ppm Bleach to dishes
-Glass washer dispenses 12.5ppm Iodine to glasses
-Dry storage foods are stored off floor and are protected
-Coolers have thermometers
-QUATS dispenser dispenses 200ppm Quats sanitizer
-Ice machines are clean and scoops held in container
-Premises kept in clean condition.

Recommendation:
-Sauce holder next to stove top holds sauces on ice, but sauce surfaces are very warm (12 - 15°C) while internal temperatures are adequate (3.9°C)
-Cook uses sauces up completely (usually < 1HR.)
-Consider developing a system to ensure that these sauces are used entirely within 2 hrs or discarded.
