308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)] Observation: Walk-in cooler substantially removed of mould on walls. Good. The shelf along the back is rusting and not in good shape. Difficult to clean (and move). Flaking plastic coating and rust may get onto food. Corrective Action(s): 1) Continue to clean unit on regular basis so mould does not return. Remove fan cover and thoroughly wash in sinks. Dust around conpressor motor developing again. Routine wipe down recommended. Discussed with operator. 2) Succession plan needed for back shelf in walk in cooler. Plan to replace, and recommend one on wheels as discussed. Violation Score: 3

Display cooler door track a little better, but needs more complete and regular maintenance. Operator in discussions with Coke supplier for replacement cooler. Make this a plan for replacement as this unit is becoming difficult to clean and maintain.
