Observation (CORRECTED DURING INSPECTION): Vegetables and sauces stored in prep cooler inserts were measured to have an internal temperature of 8C.
Corrective Action(s): Ensure all potentially hazardous foods stored in these inserts are used up within the next 2 hours and discard any leftovers. Fill inserts only 1/2 full to promote better air circulation and to ensure they are used up within 2 hours (until the prep cooler is capable of maintaining temperatures at or below 4C).

- Hand sinks were supplied with hot and cold running water, liquid soap, and paper towels. *Ensure paper towel dispensers are used.
- Quat sanitizer solution available at 200 ppm in three-compartment sink, in several spray bottles, and in buckets for storing wiping cloths
- Walk-in cooler was measured to be less than 4C
- Drawer coolers were less than 4C
- Walk-in freezer temperature satisfactory
- Hot held items were above 60C
- Food storage practices satisfactory - all food stored covered and off the floor
- General sanitation is excellent
- New beverage dispenser/ice machine installed
