Routine inspection conducted.

Findings:
- General sanitation of the facility was satisfactory.
- Temperature of prep coolers, walk in cooler, stand up & undercounter coolers recorded at or below 4C
- Walk in freezer recorded at -19C
- Hot holding units recorded above 60C
- pH of sushi rice tested and recorded below 4.0
- All handwash sink had adequate supply of hot and cold running water, liquid soap and single use paper towels.
- Prep sink has supply of both hot and cold water.
- 200ppm QUATS sanitizing solution recorded in sanitizer pails.
- Low temp mechanical dishwasher in use. 100ppm chlorine residual recorded during rinse cycle.
- Iodine concentration between 12.5ppm - 25ppm recorded at the glass dishwasher in bar area.
- Food storage practices were satisfactory.
- Kitchen hood, ice machine, veggie dicer, meat slicer maintained in good sanitary condition.
- Manager has valid FOODSAFE Level 1 certificate equivalent (Exp Jan 27, 2029)
- Permit posted at the front.
- No signs of pest activity observed.
- Back door was closed.
