205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: 1. Garlic butter next to grill not stored at 4 degrees Celsius or less.
2. Milk in drink cooler not stored at 4 degrees Celsius or less.
Corrective Action(s): 1. Operator indicated garlic butter is brought out from cooler and stored on ice beside grill. At time of inspection ice had completely melted, but garlic butter was at 7 degrees Celsius (per probe thermometer). Informed operator to ensure garlic butter is always stored on ice and not to wait until ice has completely melted to replace it.
2. Drink cooler was found to be 15 degrees Celsius. All drinks in the cooler were not potentially hazardous except for the milk. Discard the milk as it has been in the temperature danger zone. Operator removed the milk from the drink cooler.

301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: 1. Fruit flies were found in the pop gun nozzle and in the pop gun holder.
2. Pooling water found on the bottom food storage area of the prep cooler closest to the servery and the double door stand up cooler closest to the stairwell to upstairs staff area.
Corrective Action(s): 1. Pop gun and pop gun holder must be cleaned and kept clean on a daily basis to prevent sugary drink residue from attracting flies.
2. Clean up the pooling water and either use a container to catch the water leaking from the drain hose and/or do not store food on the bottom storage area of both coolers.

Observation: In-use wiping cloths were not stored in sanitizer in between uses.
Corrective Action(s): In-use wiping cloths must be stored in sanitizer to prevent bacteria/germs from growing on them. At time of inspection quats sanitizer in buckets were available but not used to store in-use towels. Quats sanitizers had concentrations of 200ppm.

Observation: Fruit flies found in the pop gun nozzle and pop gun holder.
Corrective Action(s): Aside from daily cleaning of the pop gun nozzle and holder, the immediate area surrounding the pop gun shall be kept clean on a regular basis to prevent attracting flies. Additionally, use fly traps to further help control fruit fly activity.

Observation: 1. Drink cooler at 15 degrees Celsius.
2. Leak from drain hoses in the prep cooler (closest to servery) and double door cooler (closest to stairwell)
Corrective Action(s): 1. Drink cooler shall be 4 degrees Celsius or less. Adjust thermostat and/or have cooler serviced. Until this is corrected, do not store milk or any other potentially hazardous foods in this cooler.

Comments

General observations:
All coolers were 4 degrees Celsius - except as noted above.
Chest freezer was -18 degrees Celsius
Hot holding unit was 60 degrees Celsius.
Food storage practices were generally good - except as noted above.
Organization of storage areas was satisfactory.
Hand wash sinks were stocked with liquid soap and paper towels.
Staffs hygiene and food handling practices appeared to be satisfactory.
General sanitation was satisfactory.
Quats sanitizer for in-use wiping cloths were 200ppm. Operator also using a hydrogen peroxide multi-use cleaner/disinfectant (in a ready to use spray bottle formulation) in conjunction with quats sanitizer.
Low temperature dishwasher had a residual chlorine concentration of 100ppm after the final rinse.
Chemicals were stored in a safe manner.

Notes:
Operator is planning to add a new shed to the outside of the building for storage of non-food related equipment which are currently stored in the room just off of the dry storage room with chest freezer. Once outside shed has been set up, shelves will be added to the dry storage room for additional storage capacity.
Operator does not have a Workplace COVID-19 Safety Plan per the May 14, 2020 Order of the Provincial Health Officer. Information on developing a Workplace COVID-19 Safety Plan to be emailed to the operator. Safety plan should be developed with staff and a copy available onsite in the premise by July 3, 2020.
