Hand wash stations equipped with liquid soap and paper towels. Quats sanitizer at 200 ppm.
Temperature check:
Walk in cooler at 1--3 C; walk in freezer at - 18 c or colder.
Other coolers were at 3-7 C (end of lunch rush).
Other freezers were at - 12 to - 18 C.
Hot holding for sauce, bacon, soups was above 60 C.
Temperature log was well maintained.
Dishwasher (low temp) had chlorine sanitizer residual of > 50 ppm.
Glassware washer chlorine sanitizer residual also > 50 ppm. Bar coolers were at 1-2 C.
All food items in the cooler were covered and dated. Premises well organized and maintained in sanitary condition.
Pest control in place.
Staff washrooms were in sanitary condition.
