Observation: Cleaning at the front kitchen has been done. Improvement noted. More cleaning is needed at the back kitchen.

Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: Milk in small carton internal food product temperature 22 degrees C observed stored in insert at preparation cooler. Raw marinated chicken in lower section of preparation cooler internal food product temperatures 15 degrees C.
Correction: Advised by operator that the preparation cooler is turned off over the weekend and turned back when resuming operation. Ensure cooler is at or below 4 degrees C prior to storing cold potentially hazardous foods. Above noted items discarded.

Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: At the time of inspection no bleach sanitizer solution available for use in the front and back food prepration areas.
Correction: Ensure during operation a 100ppm bleach or 200ppm quats sanitizer solution is availble for use at all times. Store all wiping cloths in this solution when not in use.

Adequate handwashing stations not available for employees [s. 21(4)]
Observation:
At the time of inspection designated hand wash sink obstructed from use. Dislodged liquid soap dispenser and customer returned pop cans (still sealed) in sink along with a box of packaged ketchup.

At the time of inspection staff washroom hand sink also obstructed from use. Sink filled with bucket full shoes, cloths, cleaning supplies, floor mat, etc.
Correction: Ensure all hand sinks are clear of obstructions and provided with liquid soap and paper towels at all times.
