Observation (CORRECTED DURING INSPECTION):
Low temperature dishwasher sanitizing with 0 ppm chlorine at dish level. It was observed during the inspection that the sanitizer bottle for the dishwasher was empty. Even after changing the sanitizer bottle and running the dishwasher multiple times, the sanitizer level was still 0 ppm chlorine.
Corrective Action(s):
Use the manual dishwashing method to adequately wash, rinse and sanitize (100-200 ppm chlorine) dishes.

Observation:
1. Open bag of sugar, bread crumbs and salt found in dry storage area.
2. Scoop for hot held rice stored in room temperature water.
Corrective Action(s):
1. Transfer sugar, bread crumbs and salt from open bags to a pest proof and food grade container.
2. Place scoop in ice water and ensure ice water is changed frequently.
To be corrected immediately.

Observation:
Accumulation of filth and grease in upper right corner under stove.
Corrective Action(s):
Clean under stove and ensure cleaning of hard to reach areas is done frequently. To be corrected today.

Observation:
Low temperature dishwasher not working adequately.
Corrective Action(s):
Service dishwasher so there is a chlorine residual of 50 ppm at the dish level for adequate sanitation. To be corrected by September 27, 2017.

Comments

Routine Inspection:
- Hand washing stations fully equipped with liquid soap, paper towels and hot/cold running water.
- All temperatures met health requirements:
Coolers maintained at or below 4 degrees Celsius.
Freezers maintained at or below -18 degrees Celsius.
Hot holding (miso soup and rice) maintained above 60 degrees Celsius.
- Chlorine (bleach) sanitizer in spray bottle = 200 ppm.
- Pest control in place. Latest pest control report, dated August 28, 2017, was satisfactory.
- All food items stored more than 6 inches off the floor.
- All food items in walk-in cooler are covered and stored properly.

Follow up inspection to occur on Wednesday as facility is closed on Tuesdays.
