Observation (CORRECTED DURING INSPECTION): - Salad station inserts were measured to be at 8C-9C. Ice level was under insert level.
- Prep/line cooler inserts were measured to be at 7C
Corrective Action(s): - Ensure enough ice is placed under salad station inserts so that the inserts are in contact with the ice/ice water. Staff refilled ice at time of inspection.
- Fill inserts only 2/3 full to promote better air circulation and to ensure ingredients in inserts are used up within 2 hours.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): A few buckets of sanitizer solution on the cook line were visibly soiled and concentrations of quats was below 200 ppm.
Corrective Action(s): Change sanitizer solution in buckets every 4 hours or sooner when the solution becomes visibly dirty.

Comments

- All hand washing stations were supplied with hot and cold running water, liquid soap, and paper towels
- Quats sanitizer solution in most buckets were above 200 ppm
- All coolers were measured to be at or below 4C
- All freezers were measured to be at or below -18C
- All hot held items were above 60C
- High-temperature dishwasher reached 73C at plate surface level during rinse cycle - good
- Glass washer at bar registered 50 ppm chlorine after rinse - good
- Ice machines maintained in sanitary condition, beverage dispenser nozzles maintained in sanitary condition, ventilation canopies maintained in sanitary condition
- Proper cooling methods were being done at time of inspection
- Temperature records well maintained
- General sanitation satisfactory

- Dessert cooler seals have been replaced and doors now close properly
