Observation (CORRECTED DURING INSPECTION): Cooked vegetables stored in vaccum sealed bag measured with an internal food product temperature of 22C. Operator stated they were stored at room tempearture for 2.5 hours.
Corrective Action(s): A dozen bags of cooked vegatables were discarded. Do Not stored any potentially harzardous food at the temperature danger zone (4C - 60C).

Observation: Stains and mildew observed on the water tray inside the ice machine.
Corrective Action(s): Clean and sanitize the inside of the ice machine. Discard the current batch of ice. Correct by: Immediately.

Observation (CORRECTED DURING INSPECTION): Hard surfaces sanitizer from spray bottles and dispenser measured at 100 ppm quats.
Corrective Action(s): Manually dilute quats stock solution to make 200 ppm quats sanitizer. Clean and sanitize all food contact surfaces.
