Observation (CORRECTED DURING INSPECTION): Left Line prep cooler at 6 to 8 C (early in day). Heavily frosted at compressor. Staff periodically scrape off frost.
Corrective Action(s): Supplement all potentially hazardous food inserts with ice until unit can maintain food at 4 C or less. This will need to be done for each rush to ensure ice bath is mainiained. Unit should be completely defrosted (not just scraped) and temperatures in unit monitored multiple times throughout day until problem solved. Service if necessary.

Comments

Concerns with dishwasher. No chlorine measured in system (despite being serviced same morning). Primed sanitizer and after several tested a residual of 50 ppm was obtained.
**Recommend this unit be monitored using test strips multiple times during the day to verify properly working.

Quats measured 200 ppm in spray bottles and sink at dispeser.
*Do not mix quats and detergent. Detergent will impact quats effectiveness.
**Make sure chemicals are clearly labelled at point of use.

General sanitation and cleanliness is good.

most cooling units working less to keep food below 4 C.
Handwash facilities good throughout store.
