209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Noticed raw chicken touching the white sandwich preparation while an employee was cutting it. Noticed raw chicken portions stored above sliced hams in the deep freezer,
Corrective Action(s): 1. Ensure raw chicken and meats etc are cut on a separate table using red cutting board. Ensure to wash and sanitize the cutting board and knife after each use. Clean and sanitize the table used for cutting raw meat. The sandwich prep cutting board was washed and sanitized in the double sink at the time of inspection. Recommended cutting the white board in small sections to allow for easy cleaning in the double sink.
2. Do not store raw meats/poultry items on top of ready to eat meats either in the cooler or in the freezer.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Build up of dirt and food debris noticed underneath the storage shelves near the sandwich prep cooler and also in corners around the wash sink.
Corrective Action(s): Clean floors throughly after removing all storage shelves and pulling refrigeration equipment. Do not store food items and other articles/equipment on the floor to allow for easy cleaning. ( May 16, 2018)

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Sandwich preparation cooler registered 9.2 degrees C at the time of inspection. All deli meats, mayo and cheeses were transferred to another cooler at the time of inspection.
Corrective Action(s): Repair or adjust the cooler to that it is capable of maintaining food items at 4 C or below. Keep monitoring the cooler every hour.
If the temperature do not fall within accepable range, repair or service the unit immediatley.
