401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): The designated handwashing sink was blocked with a tray of ingredients and spices on it. Staff are not able or encouraged to wash their hands when they become dirty.
Corrective Action(s): Immediately remove the tray from the handwashing sink so it is accessible at all times. During the inspection, the tray was relocated and the hand sink was available.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: The backdoor, in the basement, that leads to the back parking lot has a gap at the bottom of the door. This will allow rodents to get into the premises.
Corrective Action(s): Immediately install a door guard or door sweep on the base of the door to prevent the entry of pests.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Accumulated food debris found on walls and floor behind & beneath cooking equipment; shelves; racks; coolers & freezers in the basement. These conditions will attract and harbor pests.
Corrective Action(s): A detailed cleaning of the mentioned areas is needed. Scrub with hot water and soap/degreaser to remove the food debris.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: Broken floor tiles in the kitchen, and the wall in the back prep area has dents in it. These areas are not sealed and cleanable, which will encourage pests to the premises.
Corrective Action(s): Repair the mentioned areas so the surfaces are durable, smooth, level, sealed, and cleanable.

Comments

A routine inspection was completed, the following observations were made:
- Coolers 4C or colder; freezers -18C or colder; and thermometer present.
- Low temperature dishwasher had [Cl2] of 100ppm.
- Quats sanitizer in spray bottles and in 2-comp sink had 200ppm strength.
- Handwashing sink was stocked with liquid soap, paper towels, and running hot and cold water.
- Foods stored in food grade containers; covered; foods stored in groups with proteins separate or below RTE foods; and foods stored 6" off the floor on shelves or platforms.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is adequate, but improvement needed in the mentioned areas. Owner will have a deep cleaning done every month by a contracted company.
- Professional pest company contracted to monitor for, and eliminate any pests. No signs of pests.
- Structural improvements needed, and planned for this summer.
- FoodSafe certified staff present. Have staff take the FoodSafe course if their certificates have expired. Expiration date will be on the certificate, if there is none, the certificate has expired.
