Comments

General observations:
- Ambient air temperature in cutting room as well as shipping/storage room ≤4°C
- Temperature logs maintained regularly and no issues with equipment have been noted
- Food up off floor, good stock rotation noted, product all labelled
- Hand wash stations fully stocked with hot and cold running water, liquid soap and paper towel
- E-san used for sanitizer and test strips used for monitoring
- Environmental sampling done regularly and sent of to a third party for testing. Daily ATP testing done of random areas of food contact surfaces, proceedure in place for recleaning/sanitizing in the event of an unsatisfactory result.
- Knife sanitizer 'dipper wells' are maintained at and were measured to be 82C or above
- All food contact surfaces treated as clean in place (no additional sinks in place/available for cleaning knives etc)
- Equipment appeared to be in good working order, reviewed cleaning procedures for equipment, no concerns noted.
- General sanitation and maintenance is very good
- No signs of pests noted. Two gaps under/in door in shipping area were already identified by staff and replacements have been ordered.
- Thermometers present calibrated at least monthly using a reference thermometer
- No concerns with staff hygiene or food handling noted during inspection. All staff wearing hair nets, lab coats/smocks, aprons and boots.
No concerns at this time.
