-Ensure that temperature records, glasswasher and dishwasher records are kept daily.
-Ensure that all foods are kept in pest proof containers. There were several food items on site that were not kept in pest proof containers.

Pest control is coming on site regularly, techinician on site duirng the inspection.
All coolers were < 4 C.
All freezers were < -18 C.
Quats sanitizer was available.
Dishwasher was at 100 ppm chlorine.
The glasswasher had 12.5 ppm Iodine.
Advance prep for foods discussed with the cook.
General sanitation was satisfactory.
