Observation (CORRECTED DURING INSPECTION): 1. Sanitizing bucket located at the kitchen area had a bleach concentration over 200 ppm.
2. Sanitizing bucket located near the dry storage room measured with 0 ppm bleach. Chef stated the bleach was mixed with detergent.
Corrective Action(s): 1. Dilute the sanitizing bucket with water to ensure 100-200 ppm bleach is used to sanitize food contact surfaces (dilute 1 teaspoon of bleach with 1 liter of water). High concentration of bleach may pose a chemical hazard.
2. Do not mix bleach sanitizer with degergent as this will affect bleach's ability to sanitize food contact surfaces properly.

Observation: 1. Dried food debris observed on the metal guard for the dough mixer stored inside the dry storage room.
2. Accumulation of dust observed on the metal knife holder inside the dry storage room.
Correction: Clean and sanitize the dough mixer and knife rack. Follow you sanitation plan for regular sanitizing schedule. In addition, clean and sanitize all the knives stored in the dirty knife holder before using them. Correct by: Immediately.
