Observation: Various food contact surfaces are showing an accumulation of dirt, grease, stickiness and/or debris, including:
- Shelving units that are to hold washed and sanitized equipment
- The ventilation hood above the grill
- Storage containers that are to hold washed and sanitized equipment
- The tops/lids of all food containers
- Cooler/freezer handles
- the food blender located beside the 3-compartment sink
- the knife rack *must only hold clean knives

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): There was no sanitizer on-site at the time of inspection. The operator obtained bleach and new cloths. A 100 ppm solution of bleach was mixed up and cloths were placed inside to soak. Cloths must soak in the bleach solution when they are not being used. This bleach solution is to be changed hourly. An additional 100 ppm solution of bleach was mixed up for a spray bottle and labelled 'bleach'. This solution is to be changed weekly.

Observation: Multiple packages of food in dry storage and in coolers were stored in an open state, and therefore not protected from contamination. All foods must be stored covered. [Date to be corrected by: immediately]
Corrective Action(s): Cover/close all open packages of food at all times when they are not being used.

Observation: Multiple non-food contact surfaces showed dirt, debris and/or grease, including:
- Floors; including floors underneath equipment/shelves and the floor-wall interfaces
- Walls around the dishwashing area, food prep area and the grill area
- Light switches/plugs

Observation:
Observation #1: The wooden pallets surrounding the grill have become dirty and slippery. Not only is this dangerous, but the wood material is not easily cleanable and therefore not an acceptable material. [Date to be corrected by: April 20, 2019]
Observation #2: The wooden pallets raising the dishwasher have become dirty and are not easily cleanable as they are not smooth and absorb moisture. [Date to be corrected by: April 20, 2019]
Observation #3: Tinfoil and cardboard are used throughout the premise. These are not durable and easily cleanable materials. [Date to be corrected by: immediately]
Corrective Action(s):
Corrective Action #1: Replace the wooden pallets on the floor surrounding the grill with a material that is smooth, durable and easily cleanable.
Corrective Action #2: Replace the wooden pallets underneath the dishwasher with a material that is smooth, durable and easily cleanable
Corrective Action #2: Discard all tinfoil and cardboard. Clean the surfaces underneath throughly. Discontinue using cardboard and tinfoil in the food premise.

Observation: The handsink near the grill does not drain well. There is pooling water near the floor. [Date to be corrected by: January 28, 2019]
Corrective Action(s): Repair the handsink such that it can drain at the rate that it is filled.

Observation: The operators' FoodSafe Level 1 certificates have expired. All FoodSafe Certificates without an expiry date officially expired January 15, 2019. [Date to be corrected by: February 21, 2019]
