Observation (CORRECTED DURING INSPECTION): 1. Handwash station beside the wrap prep cooler had no soap available and was being used as a dishwashing sink. Operator made soap available and moved dish sponge, dishwashing brush, and soiled food container to the dishwashing area in the back during the inspection.
2. No paper towel was available in the dispenser in the staff washroom. Operator refilled paper towel during the inspection.
Corrective Action(s): 1. Do NOT use the handwash station as a dishwashing sink. The handwash sink is to be accessible and used for handwashing only. All food utensils and dishware must be washed in the 3 compartment sink in the back.
2. Ensure all handwash stations are supplied with hot/cold water, liquid soap, and paper towels at all times.

Observation: Food was not properly covered (shredded cheese, letttuce) and stored on the ground (tomatoes, feta cheese containers).
Corrective Action(s): Ensure all foods are covered and stored off the ground (15cm/6 inches) in the walk in cooler to protect from contamination.

Observation: Cooking utensils (tongs, knife) was placed on top of newspaper beside the grilling station.
Corrective Action(s): Discard newspaper and clean and sanitize tongs and knife. Newspaper is not a food grade material and cannot be easily cleaned. Do not use materials such as newspaper or cardboard for lining surfaces or storing utensils and/or equipment.

Observation (CORRECTED DURING INSPECTION): Vegatable prep sink was being used as a handwashing sink. Liquid soap observed inside the sink. Operator stated they used the prep sink for washing hands and peppers. Operator moved the liquid soap out of the prep sink during the inspection.
Corrective Action(s): Do NOT use the vegetable prep sink as a handwashing sink. The vegetable prep sink is to be used for washing vegetables only.

*Note: Ensure employee drinks are stored in the staff area in the back and not at the front by the rice hot holding.
