Observation (CORRECTED DURING INSPECTION): Plastic insert of precooked wontons held at 28C; products had been out for >2 hours. Operator stated that the products are left out for 2 hours then placed in the freezer.
Corrective Action(s): Products discarded. Ensure that all potentially hazardous foods are stored <4C or >60C.
All hot potentially hazardous foods are to be cooled from 60C to 20C in 2 hours or less and from 20C to 4C in 4 hours of less.

Observation: REPEAT OBSERVATION: Raw chicken in containers, raw chicken in a tub covered with a plastic bag, and raw ground meat stored throughout the sliding door cooler. Vegetables and other ready to eat foods stored underneath raw meats.
Corrective Action(s): Designate an area on the bottom of the sliding door cooler for raw meats.
All raw meats must be stored above ready to eat foods and vegetables.

Observation: Shelving, various milk crate containers, and surfaces found to have food and/or oil build up. (milk crates beside the dishwasher, white shelving for tortillas, island counter undercounter area, etc.
Corrective Action(s): Ensure that these containers and surfaces are cleaned on a more frequent basis; areas must be maintained in a sanitary manner

Observation: Old cardboard and newspaper found to be lining shelves and floor.
Corrective Action(s): Remove all cardboard or newspaper that line shelves and floors. They are not acceptable surfaces for repeated use in a food establishment.
