Comments

-Ensure that utensils are stored in ice and water instead of a Quats sanitizer solution.
-Ensure that fish is stored above raw meats in the walk in cooler. In this case, the fish was in completely sealed packaging.
All coolers were < 4 C.
All freezers were < -18 C.
Hot held items were > 60 C.
Temperature records were up to date.
Discussed cooking, cooling, advance preparation with the head chef.
Dishwasher final rinse cycle reached 75 C at the plate level.
One bar glasswasher had 12.5 ppm Iodine and the other glasswasher had 25 ppm Iodine. Ensure that they are checked daily.
Quats sanitizer solution was at 200 ppm.
No evidence of pests. Pest control reports to be sent to Fraser Health (business card left on site)
Hand sinks supplied with hot and cold water, soap and paper towels.
