Observation (CORRECTED DURING INSPECTION):
Perishable foods items (perogies, sour cream, cabbage rolls, schnizel) were 14C in the front display cooler. These foods are unsafe as bacteria will grow quickly at this temperature.
Corrective Action(s):
Immediately throw away all perishable food items and stop storing perishable food items in the cooler. During the inspection, staff discarded the food.

Observation:
The front display cooler was 14C and storing perishable foods. The cooler must maintain food at 4C or colder to prevent bacteria from growing.
Corrective Action(s):
Immediately call a serviceman to look as ALL coolers to ensure they can maintain food at 4C or colder at all times. Do NOT store any perishable items in the cooler until the serviceman has fixed the problem. During the inspection, the owner called a serviceman who will be arriving tomorrow to fix the units.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers were between 4C-6C; freezers were -17C or colder; thermometers present; and temperatures monitored daily.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- 3-compartment sink used for dishwashing. Soap and bleach present. A domestic dishwasher present with a "sanitizing" cycle, but staff do not use the dishwasher.
- General sanitation level is good.
- No signs of pests.
- Foods stored in food grade containers; covered; labeled; date coded; stored in groups with proteins separate or below RTE foods; and 6" off the floor.
- No expired food in use or for sale. FIFO rules followed. All foods from approved sources.
- FoodSafe certified staff present.
- Utensils used to handle foods. Disposable gloves worn to handle foods (sandwich making). ENSURE staff throw away the disposable gloves after each use, do NOT save them for later.
- A cheque for $150 (cheque #001) was provided for the yearly permit fees.

**A follow-up inspection to be conducted tomorrow to ensure the display cooler is keeping food at 4C or colder.**
