Observation (CORRECTED DURING INSPECTION): Vegetable slicer was found to have dried food residue in between the blades.
Corrective Action(s): Ensure all equipment is presoaked, followed by proper cleaning and sanitizing to prevent potential contamination of foods. Vegetable slicer was cleaned and sanitized at the time of inspection.

312 - Items not required for food premises operation being stored on the premises [s. 18]
Observation: Front area of restaurant was found to have a wooden stick (bed pole) with pieces of metal (nails) sticking out of the base of the pole. Base of pole was covered with dust.
Corrective Action(s): Remove this item from the facility. All items which are not necessary for the operation of the facility are to be removed from the facility.

315 - Refrigeration units and hot holding equipment lack accurate thermometers [s. 19(2)]
Observation: Prep cooler (closest to the back entrance) did not have a thermometer. Staff on-site we unable to find temperature records. Empty temperature record sheet for April 1 to 7 was found by the office area.
Corrective Action(s): Ensure all cooler units are properly equipped with accurate thermometers to verify proper cold holding temperatures and to properly complete temperature records. Temperatures must also be checked and recorded daily, as per your food safety plan.

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation: Neither of the two staff members on-site had FoodSafe Level 1 or equivalent training.
Corrective Action(s): In the absence of the operator at least one staff member with a valid FoodSafe Level 1 or equivalent must be on-site at all times. Future instances of operating the facility without a FoodSafe Level 1 or equivalent staff will result in the issuance of a violation ticket.

Comments

-Walk-in cooler was at 3C.
-Walk-in freezer was at -18C.
-Both prep cooler were at 4C (top and bottom).
-Front display cooler was at 4C.
-Hot holding was greater than 60C.
-Cleaning and sanitizing carried out in the 3-compartment sink. Sink plugs present and Quats sanitizer dispenser was tested at 200ppm.
-Handwash station easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer spray bottle and pail were both at 200ppm.
-Foods properly stored off the floor and covered.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary.
