- FOODSAFE trained staff present - The facility is equipped with hot & cold running water - Handsink is stocked - Temperatures of refrigeration units are adequate (<4C coolers, <-18C freezers) - Coolers are equipped with thermometers - Tomato sauce in warmer measured 57C. The temperature was still rising. *Ensure to maintain at or above 60C. - 200ppm QUAT sanitizer used to sanitize food contact surfaces and during manual warewashing - Pizzas on hot holding unit are monitored with a thermometer - No signs of pest activity noted at the time of inspection
