Observation: "REPEATED VIOLATION"
1. No sanitizer solution was available on site.
2. No drain plugs were available to carry out 3 compartment dishwashing.
Corrective Action(s): Ensure that all utensils/food contact surfaces are properly washed and sanitized.
1. Staff prepared bleach solution at the time of inspection. The concentration was noted at 200ppm. Ensure that sanitizer solution is available on site at all times during operation to sanitizer food contact surfaces such as prep tables and clean in place equipment/utensils.
2. 3 compartment dishwashing method was discussed with the staff. As per staff, drain plugs were misplaced last night. Ensure that drain plugs are available on site to ensure utensils are cleaned and sanitized properly.

Observation: "REPEATED VIOLATION"
1. Multiple food containers in the pizza prep cooler and walk-in cooler were left uncovered.
2. Small bowls of food (x2) were stacked right above the other 2 containers containing marinated paneer and marinated raw chicken. Bottom surface of bowls were touching paneer and chicken.
3. Flour bags were left open and dry food containers were not covered with lids.
Corrective Action(s): Ensure that food is protected from contamination at all times.
1. Proper cover the food containers prior to storing them in coolers to prevent the risk of contamination.
2. Bottom surface of containers can be dirty or contain bacteria that could contaminate the food if placed right on top of them. Staff discarded the marinated paneer and marinated raw chicken at the time of inspection.
3. Use proper pest proof containers/storage bins for storing flour/dry food.

Observation: Back screen door does not seal properly and has a huge gap on one side. The screen is damaged.
Corrective Action(s): Repair the screen door to ensure that it can properly seal and prevent the entry of any rodents such as mouse into the facility.

1. Build up of food debris, grease and dirt observed on the floors along the walls.
2. Back storage area was unorganized & cluttered.
3. Dry storage area was cluttered and had food debris on the floor.
4. Bottom tray of oven under the grill has build-up of debris and grease.
Corrective Action(s): Ensure that the facility is maintained in sanitary condition.
1. Conduct proper cleaning of the facility including the floors, hard to reach areas such as corners & along the walls.
2. De-clutter and organize bothe back storage area and dry storage area.
3. Clean the oven tray and ensure that it is maintained in sanitary condition.

Observation: 1. Two cutting boards were worn out with deep cuts, food debris stuck in cuts and tainted in colour.
2. Chest freezer has build-up of ice and the seal is loose.
Corrective Action(s): Ensure that all the equipment/utensils are maintained in good working order.
1. Food debris stuck in cuts of cutting boards can harbour bacteria that can contaminate food. Ensure that cutting boards have smooth surfaces, impervious and easy to clean. Staff discarded the boards at the time of inspection.
2. Clean the chest freezer and repair the seal.

Comments

Routine inspection conducted at the food facility and the following observations were made during the inspection:

Temperature (coolers to be at 4C or less, freezers at -18C or less):
- Coolers observed at 4C or less.
- Freezers at -18C or less.
- No hot holding was conducted at the time of inspection. However, the staff was packaging lunch for tiffin service. The curries (x2 large pots) were recorded at an internal temperature around 50C and were cooked 1hour before inspection and were being packaged in single use take out containers.

Storage:
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- Hand wash station was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Utensils and tongs were found in sanitary condition.

Pest Management:
- Professional pest control company conducts routine checks.

Administrative:
- Operating permit was posted in a conspicuous location.

A follow-up inspection will be conducted to ensure compliance.
